Vegetable Loaf

Ingredients
  • 2 dressed olives
  • 115g mushrooms
  • 30g margarine or butter
  • 1 onion, chopped
  • 115g brown rice, cooked
  • 115g peas, cooked
  • 1tbsp tomato puree
  • 1tbsp soy sauce
  • ½tsp ground allspice
  • 2 eggs, beaten
  • 2 hard boiled eggs
  • Salt and pepper
Method
  1. Grease a small loaf tin and line with greaseproof paper. Brush with oil and arrange 2 mushrooms down the centre of the tin with olives on each side.
  2. Melt margarine in a saucepan, chop mushrooms and put in the pan with the onions. Fry gently to soften. Stir in the peas, rice, tomato puree, soy sauce, spice and beaten eggs.  Mix thoroughly.
  3. Put half the mixture in the tin and arrange the hard boiled eggs, lengthwise, on top.Put the rest of the mixture on top. Press down well.
  4. Put greaseproof paper on top of the mixture and place in a preheated oven 350°F/180°C/Gas 4 for 35-40 minutes, until firm to the touch. Allow to cool in the tin.
  5. Serve with salad and jacket potatoes.
