Tomato, Orange And Celery Soup

Ingredients
  • 600ml / 1 pt chicken stock
  • 3 celery sticks, chopped finely
  • 400ml/14 fl.oz tomato juice
  • 2 tomatoes, peeled, seeded & chopped
  • 1 tbsp Worcestershire sauce
  • 1 orange, grated rind & juice only
  • 1 tsp dried basil
Method
  1. Put the chicken stock and celery in a large saucepan.
  2. Bring to the boil, cover and simmer for 10 minutes.
  3. Add the remaining ingredients and simmer for a further 5 minutes, until the celery and tomato are soft.
  4. Serve hot, maybe with some crusty bread.
