Spicy Dutch Honey Cake

Ingredients
  • 225g plain flour
  • 100g margarine
  • 200g dark brown sugar
  • 150ml milk
  • 3tsp baking powder
  • 4tsp cinnamon
  • 1tsp ground cloves
  • ½tsp ground white pepper
  • ½tsp ground nutmeg
  • ½tsp salt
  • 50-100g crystallised ginger (to taste)
  • 1tsp ground coriander
  • 1tsp ground cardamom
  • 1tbsp clear honey
  • 2tbsp golden syrup
Method
  1. Mix all the dry ingredients together.
  2. Melt honey and syrup together and add to the dry ingredients.
  3. Mix well.
  4. Bake in a greased loaf tin for 1-1½ hours at 180°C/350°F/Gas 4
