Prune and Walnut Loaf

  • 350g prunes
  • 175ml water
  • 350g wholemeal flour
  • 2tsp baking powder
  • 50g brown sugar
  • 1tsp mixed spice
  • 100g walnuts, chopped
  • 4tbsp sunflower oil
  • 1 egg
  • Orange juice
  • Whole walnuts to decorate
  1. Simmer the prunes in the water until soft.
  2. Allow to cool and retain the cooking liquid.
  3. Remove the stones and chop finely.
  4. Mix the flour, baking powder, sugar, spice and walnuts together.
  5. In a separate bowl, mix the prunes, cooking liquid, oil and egg.
  6. Fold together the flour mixture and prune mixture, adding orange juice to give a soft consistency.
  7. Put into a greased and lined 900g loaf tin and decorate with walnuts.
  8. Bake for 1¼ hours at 170ºC/325ºF/Gas 3
