Indonesian Pork Simmered in Sweet Soy Sauce with Chillies

  • 30ml vegetable oil
  • 6 shallots, sliced
  • 6 cloves garlic, peeled and chopped
  • 750g lean pork, cubed
  • 7.5cm piece fresh ginger, peeled and sliced thinly
  • 100ml dark soy sauce
  • 50g dark brown sugar
  • 568ml chicken stock
  • 6-9 chillies, sliced lengthwise and de-seeded
  • Freshly ground black pepper, to taste
  • Plain white rice and green vegetables, to serve
  1. Heat oil in a large wok or frying pan. Stir-fry shallots and garlic for 2-3 minutes
  2. Add pork and ginger and stir-fry for another 2-3 minutes or until seared all over.
  3. Add soy sauce, stock, sugar and chillies. Season to taste and simmer, uncovered, stirring frequently, for about an hour, or until meat is tender and liquid is reduced to coating consistency. If it dries out too quickly during cooking, add a little more stock or water.
  4. Serve with plain, boiled white rice and a strongly flavoured green vegetable like spinach or broccoli or spring cabbage.
