Honey Nut Squares

  • 100g plain wholemeal flour
  • 1tsp bicarbonate of soda
  • 50g raw cane sugar
  • 100g clear honey
  • 1 large egg
  • 2tbsp vegetable oil
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 50g flaked almonds
  • Pinch of sea salt

  1. Sift together the flour, bicarbonate, spices and salt.
  2. Add the sugar and honey.
  3. Beat the egg and oil together and stir into the mixture. (if too dry, add a little milk)
  4. Grease a small square baking tin and pour in the mixture. Smooth the top and sprinkle with flaked almonds.
  5. Bake at 190°C/375°F/Gas 5 for 25-30 minutes and cut into squares when cool.
