- 25g bulgar wheat
- 4 tomatoes, quartered
- ½ cucumber, diced
- Bunch of spring onions, chopped
- Juice of 1 lemon
- 15ml olive oil
- Soak the bulgar wheat in a bowl of cold water for 5-10 minutes. It will bulk out as it absorbs the water. Drain and squeeze out any excess water.
- Add the tomatoes, cucumber and onions to the wheat. Chopped parsley can also be added, if liked.
- Beat the olive oil and lemon juice together and then stir into the salad. Season to taste.
