Cracked Wheat Salad

  • 25g bulgar wheat
  • 4 tomatoes, quartered
  • ½ cucumber, diced
  • Bunch of spring onions, chopped
  • Juice of 1 lemon
  • 15ml olive oil
  1. Soak the bulgar wheat in a bowl of cold water for 5-10 minutes. It will bulk out as it absorbs the water. Drain and squeeze out any excess water.
  2. Add the tomatoes, cucumber and onions to the wheat. Chopped parsley can also be added, if liked.
  3. Beat the olive oil and lemon juice together and then stir into the salad. Season to taste.
