Couscous with Tomato Salsa


To Make Salsa

  • 350g/12oz Tomatoes,chopped.
  • 1/2 Cucumber,diced.
  • 1/2 Red Onion.(or a bunch of Spring Onions), chopped.
  • 1 tsp Dried Coriander leaf.
  • 1 tsp Chilli powder.
  • 30ml/2tbs Olive Oil.
  • 30ml/2tbs White Wine Vinegar.
  • 1/4 tsp granulated Sugar.
  • 1/4tsp Salt.
  • A pinch Ground Black Pepper.

To Make Couscous

  • 225g/8oz Couscous.
  • 568ml/1 pint Boiling Vegetable stock.
  • 1 Can of Chick peas,drained and washed.
  • A pinch of Turmeric.
  • 2 tsp Dried Coriander leaves.
  1. Mix together the tomatoes,cucumber and onion in a large bowl.
  2. Mix together remaining Salsa ingredients and stir into the Tomato mixture .Allow to marinate for 30 minutes,in a refrigerator.
  3. Place all the couscous ingredients in a large bowl and allow to stand until all liquid has been absorbed and couscous is cooked.
  4. Serve with Salsa piled on top.
