Brenda’s Brown Sauce

  • 8lb Apples, peeled, cored and sliced
  • 1lb chopped onions
  • 1lb stoned dates (or our chopped dates)
  • 1½lb demerara sugar
  • 4oz salt
  • 1½oz black peppercorns
  • 2tsp cayenne pepper
  • 6 cloves
  • ½oz dry root ginger
  • 1oz celery seed
  • ½tsp cinnamon
  • A few blades of mace
  • 1½pts vinegar
  1. All the ingredients can be ground together in a coffee grinder or similar.
  2. Boil all the ingredients together, gently, until thick and dark.
  3. We generally put the sauce through the liquidiser to ensure there are no solids left.
  4. Then, reboil, adding further vinegar to give the consistency you require.
