Almond and Strawberry Friands

  • 185g butter, melted
  • 125g almond meal/ground almonds
  • 6 egg whites, beaten lightly
  • 240g icing sugar mixture/confectioners sugar
  • 75g plain flour
  • 100g strawberries, sliced thinly
  1. Preheat oven to moderately hot. Grease 12 rectangular or oval friand pans, stand on oven tray.
  2. Combine butter, almond meal, egg whites and flour in a medium bowl; stir until just combined.
  3. Divide the mixture among the prepared pans, scatter with strawberry slices.
  4. Bake for about 25 minutes; stand in pans for 5 minutes then transfer to a wire rack to cool.
  5. Serve dusted with a little extra sifted icing sugar.
