Aduki and Cauliflower Flan

  • 225g Weetabix, crushed
  • 100g margarine
  • 1 small cauliflower
  • 100g cooked aduki beans
  • 25g wholemeal flour
  • 25g margarine
  • 140ml milk
  • Seasoning to taste
  1. Crush the weetabix, melt the 100g margarine and combine the two. Press into a small flan dish taking up the sides as well as the base. Set aside to cool.
  2. Cook the cauliflower florets, briefly, in boiling water then drain. Mix the cauliflower with the drained beans.
  3. Make a fairly thick sauce by heating the 25g margarine, stir in the flour and then the milk, cook for a few minutes. Season.
  4. Mix the cauliflower and beans into the sauce and place in the prepared case.
  5. Heat through for 15 minutes at 180°C/350°F/Gas 4.
